A few months ago I went to Bali, So today I wanted to share a modern version of the Gado Gado salad. This Quinoa Gado Gado Salad is pack with healthy nutrients, protein and incredible spicy peanut flavour.

Quinoa Gado Gado Salad

Prep Time: 20 minutes

Serving Size: 4 servings

Ingredients

  • Gado Gado
  • 1 CARROTS IN SLICES
  • 1 cup GREEN BEAN BLANCHED
  • 1 RED BELL PEPPER, THINLY SLICED
  • 3/4 cup MUNG BEAN SPROUTS
  • 3/4 cup THINLY SHREDDED RED CABBAGE
  • 1/2 cup WHITE OR RED QUINOA, WELL RINSED AND DRAINED
  • 1/4 cup CORIANDER
  • Sauce
  • 1/3 cup SALTED CREAMY PEANUT BUTTER
  • 1 tbsp SOY SAUCE
  • 3 tbsp MAPLE SYRUP
  • 4 tbsp LIME JUICE
  • RED PEPPER FLAKE TO TASTE

Instructions

  1. For the Salad
  2. For the Salad: On a large platter (or on individual plates) layer all of the fresh ingredients Quinoa, cabbage, sprouts, green bean, carrots Squeeze the lime juice over top and had coriander
  3. For the Sauce
  4. Make peanut sauce by adding peanut butter, soya sauce, maple syrup, lime juice, red pepper flake to a small mixing bowl and whisking to combine. Add a little bit of water if necessary.
