Delicious Bruschetta Chicken

THE CHICKEN BRUSCHETTA IS AN ALTERNATIVE TO A TRADITIONAL BRUSCHETTA! REMOVING THE BREAD AND REPLACING THEM WITH A CHICKEN BREAST , SEASONED WITH GARLIC AND ITALIAN SPICES AND COVERED WITH A BALSAMIC VINEGAR GLAZE FOR AN ADDITIONAL  FLAVOR.

THIS IS ONE OF THE MEALS THAT I MOST EVERY WEEK, AS THIS CHICKEN BRUSCHETTA HAS SUCH A  AWESOME FLAVOR  AND  ALL THE FAMILY ASK FOR THIS RECIPE TO COME BACK TO THE MENU.

Delicious Bruschette Chicken

Cook Time: 12 minutes

Serving Size: 4 portions

THE CHICKEN BRUSCHETTA IS AN ALTERNATIVE TO A TRADITIONAL BRUSCHETTA! REMOVING THE BREAD AND REPLACING THEM WITH A CHICKEN BREAST , SEASONED WITH GARLIC AND ITALIAN SPICES AND COVERED WITH A BALSAMIC VINEGAR GLAZE FOR AN ADDITIONAL FLAVOR.

Ingredients

  • For chicken:
  • 4 boneless skinless chicken breasts
  • 5 teaspoons of Italian seasoning *
  • 2 cloves garlic
  • 2 teaspoons onion powder
  • Salt to taste
  • 1 tablespoon olive oil
  • For the Bruschetta
  • 4 roma tomatoes, finely chopped
  • ¼ of red onion, finely chopped
  • 4 tablespoons fresh grated basil
  • 2 tablespoons olive oil
  • Salt to taste
  • ½ cup freshly Parmesan cheese
  • Balsamic Vinegar Glaze (you can use the store bought, or this recipe)
  • ½ cup balsamic vinegar

Instructions

  1. Season chicken with Italian seasoning, garlic, onion powder and salt. Heat the oil in a pan and cook the chicken breasts over medium-high heat until golden brown on both sides and cooked (about 6 minutes per side). Remove, Set aside and let rest.
  2. Mix the tomatoes, red onion, basil, olive oil in a bowl. Season with salt. Garnish each chicken breast with tomato mixture and Parmesan cheese.
  3. Serve immediately with a balsamic varnish (optional).
  4. For balsamic glazing:
  5. In a small saucepan over high heat and bring the balsamic vinegar to a boil. Reduce heat to Simmer for about 12 minutes or until the mixture has been thickened and reduced.
