DELICIOUS BLUEBERRIES AND OATMEAL MUFFINS

How many ways can I use blueberries? Let me count …. One, two, three, four … you have the idea! I love to make recipes with blueberries, among the fruits I can say that blueberries are really my favorite. I love them when they are in season and they burst practically in the mouth!

 

To make these muffins I used blueberries that I had actually frozen at the end of the season, but you can very well use those at the market, it will do very well.

Blueberry muffins can be  eaten for breakfast or as a snack. I always prepare in large quantity thinking that I will have some for several days, but generally after 2 days there is not any left!

Ingredients
  • 2 cups flour
  • ½ cup quick cooking rolled oats
  • 1 C. Of baking powder
  • 1 C. Of baking soda
  • 1 tsp vanilla
  • 1 ½ cup plain yogurt
  • ½ cup liquid honey
  • ⅓ cup of vegetable oil
  • 1 egg
  • 1 cup frozen blueberries
Instructions
  1. Place the grill at the center of the oven. Preheat oven to 200 ° C (400 ° F).
  2. In a bowl, combine flour, oats, semolina, ginger, baking powder and baking soda. Book.
  3. In another bowl, whisk the yogurt with honey, oil and egg.
  4. Make a well in the center of the dry ingredients and pour in the liquid ingredients. Mix with a wooden spoon, just enough to moisten.
  5. Add the frozen blueberries and mix gently. Avoid excessive stirring.
  6. Spread the dough evenly in the molds. Bake for 20 to 25 minutes or until a toothpick inserted in the center of a muffin comes out clean. Let the muffins cool on a rack.
